These delicious enchiladas are filled with seasoned hamburger and chili, then baked with cheese for a satisfying meal.

Recipe from Colleen Fraaza, paternal cousin once removed and godfathers wife. :)

Ingredients

1 lb browned hamburger (drain grease, season with onions, salt, etc.)
1 can Hormel Hot Chili with beans
1 pkg corn tortillas (from refriger section of store)
1 pkg grated cheddar or colby cheese

Instructions

Add chili to hamburger. Heat on low.

Fry tortillas in small amount of hot oil for a few seconds to soften. Don’t allow it to get crisp. Drain flat on paper towels.

Mix 1/2 cheese into chili mixture. Fill each tortilla with about 2-3 tbsp mixture. Roll up and place in shallow baking dish.

Cover with remaining cheese. Bake at 350°F oven for about 15 minutes.
