Squash Casserole

A simple and delightful squash casserole with a cheesy, buttery crunch.

Ingredients

1 TBSP vege oil
6 medium yellow summer squash, thinly sliced
1 large vidalia onion, thinly sliced
1 TBSP butter
1 cup grated parmesan
1 cup shredded sharp cheddar
1 cup sour cream
Salt and Pepper to taste
1 sleeve of ritz or club crackers crushed to medium to fine

Instructions

Preheat oven to 350 deg.

Saute the squash and onion in the oil and butter until soft. Transfer to a bowl and then mix in parmesan, cheddar, sour cream and salt and pepper. Put in casserole dish.

Sprinkle crushed crackers on top. Cook for 30 minutes. Brit loves it!! Enjoy. I am not a cook and it is so easy and fast. Enjoy.
