Cook dates, sugar, and water over direct heat until thickened, stirring constantly. Remove from heat and cool.
Mix remaining ingredients as usual, roll out, and cut. Put 1 tsp. of filling on each cookie, and then put a cookie on top. Crimp edges. Prick top of each cookie with fork. Bake in oven at 375 for 15 min.
