Sweet Potato Pecan Pie

A deliciously sweet and nutty pie made with creamy sweet potatoes and a crunchy pecan topping.

Ingredients

1 lb. yams or sweet potatoes, cooked and peeled
1/4 cup butter or margarine
1 (14 oz.) can sweetened condensed milk
1 tsp. ground cinnamon
1 tsp. grated orange rind
1 tsp. vanilla extract
1/2 tsp. ground nutmeg
1/4 tsp. salt
1 egg
1 graham cracker pie crust
1 egg
2 tbs. dark corn syrup
2 tbs. firmly packed brown sugar
1 tbs. melted butter
1/2 tsp. maple flavoring
1 cup chopped pecans

Instructions

Preheat oven to 425.

With mixer, beat hot yams and butter until smooth.

Add remaining ingredients except crust and Pecan Topping, mix well, pour into crust.

Bake 20 minutes.

Beat together egg, corn syrup, brown sugar, butter, and maple flavoring.

Stir in pecans.

Remove pie from oven, reduce oven to 350.

Spoon Pecan Topping on pie.

Bake 25 minutes longer or until set.
