Ingredients

1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
1 cup sugar
2 large very ripe bananas, mashed with a fork
2 extra-large eggs
1/2 cup plus 2 tablespoons vegetable oil
2/3 cup chopped walnuts (optional), lightly toasted (10 minutes at 350°F)

Instructions

Preheat the oven to 350°F and grease and flour a 9 x 5-inch loaf pan.

In a big bowl, mix the flour, baking soda, salt, cinnamon, and sugar.

In a medium bowl, combine the rest of the ingredients.

Add the wet ingredients to the dry ingredients and stir until just combined.

Pour the batter into the prepared pan and bake for 1 hour, or until a toothpick inserted into the middle of the loaf comes out clean.

Let cool 10 for 15 minutes, then turn it out onto a wire rack.
