Cut the chicken breasts into small, bite-sized pieces. Pat dry with paper towels to remove excess moisture.
In a large bowl, combine the chicken with oil, paprika, garlic powder, onion powder, salt, and black pepper. Mix well until evenly coated.
Sprinkle the cornstarch over the chicken and mix until each piece has a light coating.
Place the bowl in the freezer for 15–20 minutes. This helps the coating stick and keeps the pieces crispy.
Heat oil over medium heat. Carefully add the chicken pieces to the hot oil. Fry until golden brown, about 5-7 minutes, and cooked through (165°F internal temperature).
