Play with the amount of honey and pepper for your own balance of sweet heat. #bbq
Place all the ingredients in a small pot except the onions and simmer over low heat.
Meanwhile thinly slice the onions and stuff into a 1 quart size mason/bell jar.
Once the liquid is heated and the honey and salt is dissolved, carefully pour over the onions in the jar. Let cool for 5 minutes and then cover tightly with a lid and then let it cool completely.
For best results let it sit for at least 1 hour.
