Recipe is designed for 3lbs of chicken/ 3 blocks of cream cheese. Scale back a little when using less. Apply more if necessary

Ingredients

1 block of softened cream cheese per 1 lb of chicken breast
1 Cup Buffalo Sauce
2/3 Cup Ken’s Buttermilk Ranch (or homemade)
1/3 Cup Popeye’s Blackened Ranch
2 tsp Tony C’s (extra for chk)
2 tsp Fire&Smoke Society Morning Buzz (extra for chk)
8 oz Mozzarella
4 oz Monterey Jack
4 oz Sharp Cheddar
8 oz Colby Jack
1/2 tsp Black Pepper

Instructions

Soften cream cheese. Preheat oven to 375-400°. Poke small holes in the chicken and coat with neutral oil. Season with the tony’s and morning buzz. Season generously. Bake chicken in the oven until internal temp of 152–157°. Flip the chicken at some point. Once cooked, take chicken out and rough chop to small pieces. 

Shred the cheese and keep them separate for now. Start mixing the cream cheeses, sauces, and 2 tsps of the seasonings each (separate from the chk amount). Mix by hand (easiest way). Add chicken and some of the chicken pan juice too. Add the mozz, cheddar, and monterey. Mix all together. Top with colby jack and bake the whole thing in the oven for a little bit. I like to use the broiler to get crispy top. Serve with chips. Homemade chips easy just fry some corn tortillas.
